Carmelite boasts a 64-seat restaurant, a champagne bar, lounge bar and ball room, six individual suites and 11 superior bedrooms.
The hotel, which was previously called the Imperial and the Grampian, is coming to the end of the first phase of a major refurbishment and opened in June 2006.
The refurbishment created a 64-seat restaurant, a champagne and lounge bar, the Balmoral private lounge, the Ballroom, six individual stunningly designed suites and 11 superior designed bedrooms. Work on a second phase to refurbish the remaining 33 bedrooms and further develop the cellars into meeting rooms, private dining and leisure facilities is at design stage and subject to planning will commence next year.
There is not a hotel like it in Aberdeen or, in fact, anywhere else in Scotland. It is going to be a destination in itself and everyone is very aware that we are creating a hotel which is truly ground-breaking.

Operations Director - David Trotter, who previously headed up the hospitality operations at Murrayfield Experience in Edinburgh and Celtic Football Club, he also assisted with new openings at other Sports Stadia. Whilst overseeing the 1st phase, he is now overseeing the 2nd & 3rd phase refurbishment plans and ongoing business operations.
Originally from Troon, and having worked in Glasgow and Edinburgh, David has adopted Aberdeen and has become Chairman of HIT Scotland Grampian. Although running a new Hotel business is very different from the hospitality industry, where his highlight was in organizing Murrayfield Experience, providing sit down meals for 5,000 fans for the Calcutta Cup victory over England, he has quickly applied the key in any hotel operation – treating hotel guests as if they were in your own home.

General Manager Elaine Bayez was General Manager of the Grampian Hotel before the refurbishment, having served in the same position when the hotel was corporately owned. Having spent over 10 years in Aberdeen Hotels, Elaine has huge knowledge of the City and it’s businesses. Elaine will shortly be going on Maternity leave, which Roy McKandie will continue these great business relationships.
Food & Beverage Manager – Peter Reynolds also joined the Carmelite team in December 2006 from another local restaurant. Having experience in both local restaurants and hotels, Peter is responsible for all catering and events at Carmelite, the welcoming face and personality you’ll come across on our ground floor. Longest Serving Staff Member at Carmelite has clocked up a 30-year long service award – even though the hotel has only been open since June 2006
Yvonne Duncan, who works at the Carmelite in Stirling Street, started her career at the venue when it was still known as The Imperial and stayed with it through its years as The Grampian.
The 46-year-old was given a white gold watch as a reward for the three decades of loyal service she has given to the hotel.
“It’s been great,” she said. “I get on well with my colleagues and my job is flexible with regards my children. Carmelite is the best the hotel has looked in all the years I’ve been here. Its recent renovations were the first time work has been done that I’ve been really taken aback by. It is simply stunning! ”
